Broccoli and Coconut Soup
We love greens and we love coconuts and when combined with fabulous spices, you get a sensational soup that is everyone's favourite fall-back for dinner.
Ingredients
2T coconut oil or ghee
1 onion, chopped
2 garlic cloves, crushed
2 green chillies, seeded and chopped
1t ground cumin
1t ground coriander
1/2t ground or fresh turmeric
1/2t ground or fresh ginger
750ml vegetable stock
300ml coconut milk
500g broccoli
juice of 1/2 lemon
unbleached sea or rock salt
coconut shavings, toasted to garnish (optional)
Method
Heat oil in large saucepan
Add onion garlic and chillies and cook gently for about 4 minutes
Stir in the cumin, coriander, turmeric and ginger
Add stock and coconut milk and bring to the boil
Reduce the heat, cover saucepan and simmer for about 10 minutes
Stir in the broccoli and cook for about 2 minutes
Process about three quarters of the soup in a food processor or blender until smooth
Return the processed soup to the saucepan
Stir in lemon juice and add salt and pepper to taste
Heat gently for a few seconds if necessary then serve
Sprinkle with coconut shavings and serve warm
